This flour is high protein 12.8-13.2%. This makes it great for breads, rolls and pizza dough. But it also works great for making gravies, batters, and can be mixed with our pastry flour to make an all purpose flour. You will be hard pressed to find another flour that is unbleached and unenriched to match our quality.
